This is a quick and easy appetizer that is based on grilled eggplant that is dressed with balsamic salsa. The salsa includes garlic, mint, tomatoes, salt, pepper, and sumac (a Middle Eastern seasoning), and is brought together with a balsamic vinaigrette. Read on to find out more about this recipe!

You will need a cutting board, a bowl, a knife, and a grill.2Gather your ingredients. Then, prepare to make the eggplant.4Wash your eggplant and cut it into 3/4 inch slices.



5Season the sliced eggplants with salt, black pepper, and drizzled olive oil. Flip each slice and repeat. You want to make sure that each slice is evenly covered with seasoning.

6Put the eggplants on the grill once the grill is preheated. After 5 minutes on one side, rotate the eggplant about 90 degrees and grill it for another 5 minutes.Rotating the eggplant gives the surface a nice grill char. When grilling the eggplant, you want to look for a “char” look that gives the eggplant the grilled flavor.

7Place the eggplants on your serving plate and prepare to make the salsa. The salsa contains tomato, garlic, and mint for the vegetables that will have balsamic vinegar and olive oil mixed in, followed by salt, pepper, and sumac. 8Mince the garlic, dice the tomatoes, and dice the mint.

9Place the vegetables in a bowl.

10Make the dressing that will bind together the vegetables and the eggplant. This dressing calls for 1 teaspoon of salt, 1 teaspoon of pepper, 1 teaspoon of Sumac Middle Eastern seasoning, and balsamic vinegar. Add enough balsamic vinegar so that all the seasonings can be evenly coated throughout the entire dish. Add more balsamic as needed.

11Place all the ingredients for the dressing in the same bowl as the diced vegetables and mix until all the seasonings and balsamic vinegar is coated all over the tomatoes, mint, and garlic. Test-taste the salsa and adjust it to your liking.

12Mix the eggplant with the salsa, and you’re done! You can serve it in many different ways. For example, one popular way to eat this dish is to pair it with a baguette.
